More infoWe are trying, searching and creating. This time we discovered the information that chickpeas goes perfectly well with chocolate taste. We have tried it and are bringing you a recipe for perfectly healthy cookies full of plant proteins from chickpeas and cocoa with fruit sauce.
Before we start, you need to know one more information. The water that you boil the chickpeas in, can be whipped in a similar way as egg whites. Thus it may serve as an alternative binding material to eggs and is suitable for vegan cuisine. We will work with this fact even in our recipe.
250 g of boiled chickpeas
150 g of chopped almonds (pre-soaked almonds)
100 ml of plant milk (almond, rice, spelt,…)
80 g of cocoa powder
200 ml of water left after boiling chickpeas (or 3 eggs)
1 tsp of baking soda
Pinch of salt
3 tbsp of agave syrup (or honey)
For fruit sauce:200 g of fruit of your choice (fresh, frozen)
1 tsp of corn starch
Cane sugar

As the first thing we need to soak the chickpeas in water overnight. The next day it will be ready for cooking which will také about 2 hours. Before cooking rinse th chickpeas with cold water and boil in fresh water (the water that was used for soaking the chickpeas overnight contains toxines and growth inhibitors that prevent the body to digest properly.) You can skip this process in case you buy pre-boiled chickpeas in a can. We should not forget that the water used for cooking wil later serve as an alternative to eggs. In case we prefer to use the faster variant, we need to use eggs instead.
02When the chickpeas is cooked, we mix it together with almonds, plant milk, cocoa powder, baking soda, salt and sweetener. We mix this mixture with the substanc whipped from the water left after boiling the chickpease. In this way created dough can be used as the body of a cake, for muffins or cookies like we did. Pour the dough in the shape of cookies onto a sheet of baking paper. Put it in the oven pre-heated for 180°C and bake for 20 to 25 minutes.
03While the cookies are baking in the oven, start preparing the fruit sauce. Warm up a few table spoons of water, add the fruit and cane sugar. Let boil for a while and add a tea spoon of corn starch mixed with water. Lt the substance boil until the final consistency of your preferences. After taking the cookies out of the oven and cooling, you can pour the fruit sauce over them or you can dip the cookies in it as you need.
