Beetroot Hummus Toast

Ingredients

slice of sourdough bread

hummus

oyster mushroom

egg from a happy hen

olive oil

parmesan

pepper

Instructions

Tear the oyster mushrooms into pieces and sauté them in a tablespoon of olive oil. Add the miso paste, a little water, and let it soften and turn golden. Meanwhile, prepare the scrambled eggs.

Layer on toasted sourdough bread: hummus, beetroot, maitake mushrooms, eggs, pepper, and finally grated Parmesan.
