Super Quick Cabbage Soup

Discover a simple and quick recipe with sauerkraut and potatoes – the perfect soup to warm and delight.

Ingredients

400 g potatoes

1 larger onion

packaging of sausages containing at least 90% meat

salt

pepper

crushed sweet paprika

oil

sour cream 8% (optional)

Instructions

In a little oil, fry the finely chopped onion. Add sliced sausages and fry together briefly.

Peel the potatoes and cut them into two halves. Chop one half into cubes and add to the pot, grate the other half finely – it will be used to thicken the soup.

Sprinkle everything with sweet paprika and briefly sauté (be careful not to burn the paprika). Pour with water.

Once the potatoes are soft, add the sauerkraut, salt and pepper. Let it cook together for a while.

Finally, stir in the grated potatoes to thicken and cook for a short while longer.

Serve ideally with a spoonful of sour cream. The best is the chilled soup – even on the second day.
