400 g potatoes
1 larger onion
packaging of sausages containing at least 90% meat
salt
pepper
crushed sweet paprika
oil
sour cream 8% (optional)
In a little oil, fry the finely chopped onion. Add sliced sausages and fry together briefly.
02Peel the potatoes and cut them into two halves. Chop one half into cubes and add to the pot, grate the other half finely – it will be used to thicken the soup.
03Sprinkle everything with sweet paprika and briefly sauté (be careful not to burn the paprika). Pour with water.
04Once the potatoes are soft, add the sauerkraut, salt and pepper. Let it cook together for a while.
05Finally, stir in the grated potatoes to thicken and cook for a short while longer.
06Serve ideally with a spoonful of sour cream. The best is the chilled soup – even on the second day.
