1 small sweet potato
approx. 80 g cooked chickpeas
1 egg
1/2 ripe avocado
Ghee
Peel the sweet potato, cut it into cubes and bake at 180 °C for approximately 20–25 minutes until soft. Then lightly mash with a fork and season with a pinch of salt.
02If using canned chickpeas, rinse them. Briefly sauté in a pan with ghee or olive oil until heated through and lightly browned.
03Prepare a fried egg in a small pan. Season with salt, pepper, and optionally sprinkle with sesame seeds or chili.
04Place the sweet potato mash, chickpeas, kimchi, and sliced avocado into a bowl. Top with the egg.
