400 g of old cooked jasmine rice
200 g chicken meat sliced into strips
1 small yellow capsicum, chopped into cubes
100 g of fresh pineapple, cut into cubes
2 tablespoons coarsely chopped cashew nuts
2 tablespoons of vegetable oil
1 clove of garlic, chopped
1-2 tablespoons of fish sauce
1 volume of chopped spring onions
cup of chopped coriander
Heat up the wok or a large pan with oil.
02Sauté the garlic for 30 seconds, add the meat and fry for 4-5 minutes until golden. Remove and set aside.
03Add oil to the pan again, sprinkle with paprika and pineapple, and sauté for 2 minutes.
04Add the kimchi, briefly boil.
05Add rice, fish sauce. Quickly stir-fry over high heat to heat the rice and lightly fry.
06Mix the meat and cashews.
07Switch the spring onion and coriander.
08Serving - divide onto plates and you can add lime wedges or extra coriander to taste.
